    一定要学会这道香辣茄子,记得要多煮一些白饭,因为拿来拌饭一流,肯定会不断添饭!

    Step 1

    茄子切成每节2寸长,再切开四瓣。Cut the eggplant into 2 inches long, and then cut into four pieces.

    Step 2

    虾米剁碎。Minced the dried shrimp.

    Step 3

    适量热油,放入茄子过油,捞出,沥干油备用。Heat some oil, add the eggplant to light-fried, take out and drain the oil for later use.

    Step 4

    锅中留油2汤匙,爆香蒜蓉、虾米碎和青红指天椒炒香。Leave 2 tbsp oil in the wok, sauté the garlic, dried shrimp and green & red Chili Padi until fragrant.

    Step 5

    倒入已过油的茄子、九层塔及调味料和虾米水,翻炒均匀即可盛碟。Pour in the oiled eggplant, Thai Basil, seasonings and dried shrimp water, stir-fry evenly and ready to serve.
